Frequently Asked Questions

Gas Mark is the dial setting on a British gas oven, ranging from 1/4 (very low, 110°C) to 9 (very hot, 240°C). Each step is roughly 25°F (≈14°C). It is used in UK, Irish, Australian, and South African cookbooks.

There is no exact formula — Gas Mark is a 12-step scale, so we find the closest match. Roughly: Gas Mark = (°C − 121) / 14, then round to the nearest standard value (1/4, 1/2, 1, 2, …, 9).

In US recipes, "moderate" oven = 350°F = 180°C = Gas Mark 4. "Hot" = 400°F = 200°C = Gas Mark 6. "Very hot" = 450°F+ = Gas Mark 8+.

Fan (convection) ovens cook faster — reduce the temperature by ~20°C / 35°F or shorten time by 20%. The recipe usually specifies "fan" or "no fan"; this converter shows the bare temperature.

Mostly not. North America uses °F. Continental Europe uses °C. Gas Mark survives in UK and Ireland because of decades of cookbooks and gas oven dials. Modern UK ovens often show all three.
